Pumpkin crepes with maple cream

The cream is buttery without butter
Maple cream is crystallized and whipped syrup: it has the consistency of butter without containing dairy. Here it's worked with cream cheese and ricotta.
The crêpes get their color and aroma from roasted pumpkin and four spices.

What is needed
Serves 4. The first eleven ingredients are for the crêpes, the others for the cream.
150 g pumpkin pulp
100g all-purpose flour
20 ml of Pure Dark Maple Syrup
1 pinch of salt
1 pinch ground cinnamon
1 pinch ground ginger
1 pinch of ground nutmeg
1 pinch of vanilla powder
100 ml whole milk
2 eggs
20g butter, plus extra for the pan
100 g of Maple Cream
200 g cream cheese
60g cow's milk ricotta
60g icing sugar
10 ml of Pure Dark Maple Syrup
Ground cinnamon for garnish
Eight steps
Pumpkin
Dice it, wrap it in parchment paper and bake at 180 °C for 40 minutes. Let it cool slightly.
The batter
Blend the cooked pumpkin with flour, maple syrup, salt, spices, milk, eggs, and melted butter.
Rest
Transfer to a bowl, cover with plastic wrap, and refrigerate.
The cream
Combine all cream ingredients and whisk with electric beaters until firm.
In the fridge
Cover with plastic wrap, about an hour.
In a pan
Non-stick, shallow-sided pan, 18-20 cm, greased with butter. Pour in a ladleful and rotate until the bottom is covered.
Cook
About one minute per side: flip when the edges come away.
Stuff
Fill the crêpes with the cream, fold them in half, and decorate with more cream and a sprinkle of cinnamon.
Why does maple cream change the outcome?
It contains no dairy but behaves like a whipped butter: it is maple syrup that has been boiled, cooled, and worked until it becomes spreadable.
Two rests in the fridge, one for the batter and one for the cream: factor them in when you plan.
