Pulled seitan, barbecue sauce, and coleslaw

Hand-shredded seitan strips, cooked in barbecue sauce, soy, tomato paste, and maple syrup. Topped with a purple cabbage, savoy cabbage, and carrot coleslaw.

The sandwich is assembled at the last minute, with the buns heated on the griddle.

What's needed

Makes 2 sandwiches.

2 sesame seed buns

300g seitan strips

1 clove of garlic

1 tablespoon smoked paprika

120g barbecue sauce

30 ml soy sauce

20 g tomato paste

20 ml Pure Dark maple syrup (10 ml in the coleslaw, 10 ml in the pulled pork)

1 teaspoon apple cider vinegar (for the pulled pork)

Extra virgin olive oil

80g vegan mayonnaise

1 tablespoon Dijon mustard

1 teaspoon apple cider vinegar (for the coleslaw)

50g of red cabbage

1¾ oz savoy cabbage

50g julienned carrots

½ red onion

Preparation

Eight steps

Coleslaw dressing

Whisk together the vegan mayonnaise, mustard, apple cider vinegar, and 10 ml of maple syrup. Season with salt.

The vegetables

Finely slice the red cabbage and savoy cabbage, combine them with the julienned carrots and sliced onion, dress with the sauce and let marinate.

Seitan

Shred the meat with your hands.

In a pan

Heat two tablespoons of oil, add the pressed garlic and seitan, then mix in the paprika.

The sauce

After 5 minutes, add barbecue sauce, soy sauce, tomato paste, 10 ml of maple syrup, and apple cider vinegar.

Cooking

Add 200 ml of water, stir, cover, and continue cooking for 10 minutes over low heat.

The buns

Halve them and warm them on the griddle, inner side down.

Stuff

Generous base of pulled pork, coleslaw on top, close and serve immediately.

The council

Two things to know

First, prepare the coleslaw. It needs to sit in the dressing while the seitan cooks: that's when it releases water and absorbs flavor.

The syrup goes into two different places. Half in the coleslaw dressing, half in the pulled pork base.
