Phyllo pastry baskets, sweet and savory filling

Diced butternut squash seasoned with oil, thyme, and maple syrup and roasted at 200°C. Then, chopped chestnuts, diced feta, and chopped pecans.

To make the baskets, stack six oiled sheets of phyllo pastry, cut them into squares, and place them in a muffin tin.

What it takes

Serves 12 tartlets, muffin tin.

1 package phyllo dough (12 sheets 24 × 36 cm)

650g butternut squash flesh

200g cooked chestnuts

180g feta

15 ml (20 g) of Pure Dark Maple Syrup

40g pecans

2 sprigs of thyme, plus a few leaves for decoration

Extra virgin olive oil

Salt and pepper

Preparation

Eight steps

The oven

Preheat it to 200°C.

Pumpkin

Slice it into pieces about 1.5 cm thick, remove the peel, and cut the flesh into cubes.

Season

In a bowl, combine oil, salt, pepper, and maple syrup. Add thyme and mix well.

Roast

Arrange the pumpkin on a baking sheet lined with parchment paper and bake for about 30 minutes.

The filling

Let it cool slightly, then mix in the coarsely chopped chestnuts, cubed feta, and chopped pecans.

The baskets

Lay out a sheet of phyllo pastry, brush it with oil, and place another sheet on top. Continue this process until you have 6 sheets, oiling the top one as well. Divide into 6 squares and place them into the greased muffin tin cavities. Repeat for another 6 baskets.

Double cooked

Bake the pastry cups at 200°C for 5 minutes, remove from the oven, fill with the filling, and return to the oven for another 10 minutes, so the feta melts slightly.

Serves

Decorate each tartlet with a few thyme leaves.

Two things to know

The phyllo dough is cooked twice. The five minutes of empty baking serve to stiffen the shell: if filled raw, it will collapse.

Each sheet must be oiled, including the last one. It is the oil between the layers that creates the flakiness.
