Fruit skewers with maple whipped cream

Greek yogurt blended with Gold maple syrup, then very stiffly whipped cream folded in from bottom to top. Topped with chopped pistachios.
Twelve skewers with strawberries, blueberries, banana, melon, pineapple, and kiwi, served cold alongside the cream.

What it takes
Serves 12 skewers, 4 people.
12 strawberries
12 large blueberries
1 banana
½ melon
½ pineapple
2 kiwis
200 ml of fresh whipping cream
160g Greek yogurt
40 g of Pure Gold Maple Syrup
Pistachio granules
Five steps
The base
In a large bowl, mix the Greek yogurt with the maple syrup.
Cream
Whip it until very stiff with electric beaters and gently fold it into the yogurt, with movements from bottom to top, so as not to deflate it.
In the fridge
Decorate the surface of the cream with chopped pistachios and let it rest.
The fruit
Wash and dry the strawberries and blueberries. Peel the banana and cut it into 2 cm thick slices. Peel and dice the melon, pineapple, and kiwi into medium-sized cubes.
Compose
Assemble 12 skewers, alternating the fruits, and serve them cold with the whipped cream.
Two things to know
Cream should be folded in, not stirred. Use large, upward strokes: stirring in circles will curdle it.
Bananas should be cut last, just before adding them: they blacken quickly.
