Two creams, two colours, one glass

A base of citrus, coconut cream, and dark maple syrup, divided into two: one half goes with mango, the other with pomegranate juice.

They are layered in the glass for a two-tone effect and served immediately after two hours in the fridge.

180 ml orange juice (approx. 2 oranges)

20ml lemon juice (½ fruit)

420g coconut cream

50 ml Pure Dark Maple Syrup

250g mango pulp

100ml pomegranate juice

Preparation

Eight steps

Squeeze

The oranges and the half lemon.

The base

Pour the juice into a blender with 300g coconut cream and maple syrup.

Blend

About one minute, until smooth and creamy.

Divide

In two equal parts.

The mango

Blend the pulp until smooth and mix it with one of the two parts.

The pomegranate

Blend the other half with the remaining 120g of coconut cream and the pomegranate juice.

In the fridge

At least two hours, both compounds.

Compose

Alternate the two preparations in the glass and serve immediately.

The board

The two-tone effect requires two hours of refrigeration

The two mixtures must be cold and dense to remain separate in the glass: if poured warm, they will mix.

Serve immediately after preparation, not before.
