Very hydrated dough, worked only with a fork: type 1 flour, water, brewer's yeast, and salt. One hour in a bowl, then three in a baking pan.

The brine of oil, water, salt, and organic Dark maple syrup goes into the dimples and creates the crust.

What is needed

Serves 4, for one oven tray.

400g type 1 flour

320 g cold water

7 g fresh brewer's yeast

15g salt

3 tablespoons extra virgin olive oil (brine)

2 tablespoons of Pure Organic Dark Maple Syrup (brine)

A generous pinch of salt (brine)

2 tablespoons water (brine)

Preparation

Eight steps

The flour

Place it in a large bowl with the salt.

Yeast

Dissolve the yeast in the water, pour the liquid into the flour and mix with a fork until a uniform, moist and sticky mixture is formed.

First proofing

An hour in the same bowl.

In baking dish

Line a baking sheet with parchment paper and pour in the dough. Roughly spread it out with oiled hands, then let it rise for another 3 hours.

The oven

Heat to 190 °C.

The brine

Prepare it with oil, water, maple syrup and salt.

Dimples

With oil-greased fingertips, create dimples on the surface, then pour the brine and spread it by slightly tilting the baking pan.

Bake

25 minutes, or until golden brown.

The board

Two things to know

Do not knead the dough by hand. It is intentionally sticky: a fork is enough, kneading would dry it out.

Make the dimples when the oven is already hot, just before baking, otherwise they will close up.
