Syrup instead of brown sugar

A caipiroska with apricot pulp muddled with lime, and Amber maple syrup instead of sugar.

Since it's already liquid, it dissolves in the ice instead of settling at the bottom, and leaves an aftertaste that sugar doesn't provide.

What is needed

Serves 2.

½ lime, plus 2 slices for garnish

20 ml (30 g) of Pure Amber Maple Syrup

100 g fresh apricots

80 ml of vodka

1 sprig of mint for garnish

Preparation

Five steps

Lime

Cut it into wedges and arrange them at the bottom of the glasses.

Pest

Add the maple syrup and muddle with a mortar and pestle or a bar muddler.

Apricots

Cut them into small cubes, add them to the lime, and muddle those too.

Ice and vodka

Fill the glasses with ice and pour in the vodka.

Mix and decorate

With a long-handled spoon, then an apricot slice, a sprig of mint and a slice of lime.

You need a variety that can be felt alongside the vodka and apricot without disappearing: the Gold, being more delicate, gets lost here.

Muddle in two steps: first the lime with the syrup, then the apricots.
