Cookies with chestnut flour, maple syrup, and fig jam

Chestnut flour and rice flour worked with cold butter until sandy, then maple syrup and an egg. An hour in the fridge.

What is needed
Yields 10 large cookies. The time includes one hour of refrigeration.
200g chestnut flour
100g rice flour, plus extra for dusting
90 g cold butter
35 ml (55 g) of Pure Dark Maple Syrup
1 egg
180g fig jam
Eight steps
Sandblasted
Sift the two flours, add the cold cubed butter, and work with your fingertips until it forms a sandy mixture.

Combine maple syrup and egg and mix, first with a fork, then with your hands, until the mixture is smooth and elastic.
One hour in the fridge
Form a disc and wrap it in cling film.
Roll out
On a lightly floured surface, roll out to about ½ cm thick, and cut out the cookies, placing them on a baking tray lined with parchment paper.
The hole
Cut a round hole in the center of half of the cookies.
Cook
Bake in a preheated oven at 180 °C for 8-10 minutes, then let cool.
Stuff
Once the biscuits are cold, spread a teaspoon of fig jam on the ones without a hole and cover them with the ones with a hole, pressing lightly.
Save
In an airtight container, in a cool place, for up to 3 days.
Two things to know
Fill them when cold. On a warm biscuit, the jam melts and runs out of the hole.
Half a centimeter is the right thickness. Chestnut flour is crumbly: thinner ones break when you pair them.
