Virgin colada with maple syrup

Pina Colada without rum
Pineapple juice, thick coconut milk, and Amber maple syrup: blend with ice and pour into a tall glass.

120 ml pineapple juice
60 ml Pure Amber maple syrup
60ml canned coconut milk (the thick part)
Pineapple wedges for garnish
Four steps
In the blender
Pineapple juice, maple syrup and coconut milk with a handful of ice. Blend until smooth.
In the glass
Pour into a tall glass.
The pineapple
Slice a wedge and pan-fry it lightly.
Garnish
With a grilled pineapple slice and a pineapple leaf.
You need the thick part of the coconut milk
The stuff at the bottom of the can, not the liquid: that's the part that gives the colada its creaminess.
The grilled pineapple is what changes the drink: it caramelizes slightly and scents the rim of the glass.
