What is needed
Doses for a 20 × 30 cm pan. Plus 4 hours in the freezer.
500g Greek yogurt
20g of Pure Dark Maple Syrup
1 apricot
70g strawberries
50g raspberries
50 g shelled pistachios
Seven steps
Wash the fruit
Wash and dry it thoroughly.
Size
Apricot and strawberries in thin slices, raspberries halved.
Pistachios
Break them into coarse pieces.
Yogurt
Mix it with the maple syrup, pour it into a baking tray lined with parchment paper, and spread it into a layer just under 1 cm thick.
It sinks
Place the fruit on top, pressing it gently into the yogurt. Do the same with the pistachios.
In the freezer
Cover with plastic wrap and let cool for about 4 hours.
Break and serve
Break the slab roughly and serve immediately.
Two things to know
Serve immediately. Yogurt melts quickly out of the freezer: break it up at the last minute.
Store in the freezer, in food bags or airtight containers.
The ingredient
The variety used in this recipe. Dark, robust flavor: it holds up during cooking and stands out in a mixture.
