It has a dark and intense color, a thick and full-bodied consistency, and a very strong and concentrated flavor, with an aftertaste of dark caramel and licorice.
Only a small amount is needed to impart its characteristic taste to desserts and beverages.

The classification is based on colour and taste intensity and is linked to the time of sap collection: the product of early season collection is lighter and more delicate (Golden, Delicate taste), while that of late season is darker and with more intense, almost caramelised notes (Very Dark, Strong taste).
There is no better grade, all MapleFarm maple syrup is Grade A: the choice depends on personal taste.
The Gold variety is perfect to be enjoyed plain, the Amber has a fruity flavour ideal with yogurt, Dark, the most common, is excellent with fruit and Very Dark is perfect for baked goods and savoury pairings.
