The classification is based on color and taste intensity and is linked to the time of sap collection: the product of early season collection is lighter and more delicate (Golden, Delicate taste), while that of late season is darker with more intense, almost caramelized notes (Very Dark, Strong taste).
There is no better grade, all MapleFarm maple syrup is Grade A: the choice depends on personal taste.
The Gold variety is perfect for enjoying on its own, the Amber has a fruity note ideal with yogurt, Dark, the most common, is excellent with fruit, and Very Dark is perfect for baked goods and savory pairings.
