The classification is based on color and taste intensity and is linked to the time of sap collection: the product of early season collection is lighter and more delicate (Golden, Delicate taste), while late season collection is darker with more intense, almost caramelized notes (Very Dark, Strong taste).
There isn't a better grade; all MapleFarm maple syrup is Grade A: the choice depends on personal taste.
The Gold variety is perfect to enjoy on its own, Amber has a fruity note ideal with yogurt, Dark, the most common, is excellent paired with fruit, and Very Dark is perfect in baked goods and for savory pairings.
