The classification is based on color and taste intensity and is linked to the timing of sap collection: the product collected at the beginning of the season is lighter and more delicate (Golden, Delicate taste), while that from the end of the season is darker with more intense, almost caramelized notes (Very Dark, Strong taste).
There is no better grade, all MapleFarm maple syrup is Grade A: the choice depends on personal taste.
The Gold variety is perfect to enjoy on its own, Amber has a fruity note ideal with yogurt, Dark, the most common, is excellent paired with fruit, and Very Dark is perfect for baked goods and savory pairings.
