The classification is based on colour and taste intensity and is linked to the timing of sap collection: the product from early season collection is lighter and more delicate (Golden, Delicate taste), while that from late season is darker with more intense, almost caramelized notes (Very Dark, Strong taste).
There is no better grade, all MapleFarm maple syrup is Grade A: the choice depends on your personal taste.
The Gold variety is perfect to enjoy on its own, Amber has a fruity note ideal with yogurt, Dark, the most common, is excellent paired with fruit, and Very Dark is perfect for baked goods and savory pairings.
