Half of these uses are not sweet

The first thought always goes there: a stack of pancakes and an amber drizzle. But maple syrup has been in the pantry for years, and the interesting part is what no one expects.

Ten uses taken from everyday cooking. Five sweet and five savory: the latter are the ones that change the way you look at the bottle.

Five Sweet Uses

Five savory uses

The sugar conversion

The sweet side

Five ways, zero pancakes

Wherever sweetness is needed instead of sugar or honey. These are the five you expect, but you haven't tried them all.

Drinks and cocktails

Tea, coffee, juices. And in mixology: in an Old Fashioned, it replaces sugar.

Granola

Instead of honey in oat and dried fruit mixes. Also for energy bars.

Cakes and cookies

In the dough, instead of sugar. With three tips, below.

Caramel popcorn

Caramel from syrup and water, unsalted popcorn, to cool on parchment paper.

Ice cream and fruit salad

On ice cream, on spoon desserts, on sliced fruit. And in tiramisu.

If you use it instead of sugar

Three numbers to keep in mind

In baked goods, the substitution is not one-to-one: the sweetening power changes, and so does the water incorporated into the dough.

75 g

Of maple syrup, they sweeten as much as 100g of refined sugar.

−30%

The liquid ingredients to remove from the recipe: the syrup already contains some.

−25 °C

The oven temperature to be lowered compared to the original recipe.

The savory side

Here begins the surprising part

In North American tradition, maple syrup is a condiment, not a dessert. Five uses that prove it.

Meat and fish

Marinades, reductions for roasts, barbecues. It forms a crust on glazed salmon.

Baked vegetables

Oil, salt, paprika, and syrup on pumpkin, sweet potatoes, carrots, and Brussels sprouts.

Asian dishes

Glaze tofu, seitan, and tempeh. In Pad Thai, it is incorporated into a sauce with peanuts and lime.

Salads

With oil, apple cider vinegar, and lemon, with optional mustard or ginger. An unusual sweet and sour dressing.

Cheeses

Like a compote on a cutting board: salty against aromatic sweetness.

Which variety with which cheese

It matters which bottle you open. The delicate Gold, with sweet notes of caramel, pairs well with young cheeses. The more robust Very Dark stands up to aged and flavorful ones.

In short

  • Gold · fresh cheeses
  • Very Dark · aged cheeses
