Ingredients
For the salad:
- 60 g of cashews
- 150 g of broccoli florets
- 150 g of Romanesco broccoli florets
- 100 g of cooked chickpeas

For dressing:
- 10 g of

- 2 tablespoons of extra virgin olive oil
- 15 g of

- 1 tablespoon of soy sauce
- 1 tablespoon of water
To garnish:

Instructions
- Toast cashews in a frying pan without adding fat until golden and crispy.
- Salt the broccoli and romanesco florets and steam them for about 40 minutes, until tender. Let them cool.
- Prepare the dressing by emulsifying the maple syrup, oil, peanut butter, soy sauce, and water with an immersion blender.
- Combine the florets in a salad bowl with the cooked chickpeas and cashews. Season with the prepared dressing, scatter white sesame seeds and serve.
