Shrimp curry with maple syrup

- 300 g shelled prawns (12-14)
- ½ golden onion
- 1 clove of garlic
- 1 cm fresh ginger
- 10 g curry powder
- 400 ml of coconut milk
- 200 g of tomato puree
- 20 g of tomato paste
- 20 ml (30 g) of MapleFarm Pure Maple Syrup – Dark
- 180 g basmati rice
- ¼ lime (juice)
- extra virgin olive oil
- salt
- cilantro or fresh parsley
- fresh chili
Instructions
- Heat a drizzle of oil in a frying pan and brown the shrimp just a couple of minutes on each side, until browned.
Set them aside. - Prepare chopped onion, garlic and fresh ginger and sauté in the same pan along with more oil.
- Combine the curry, let it season, then pour in the coconut milk, tomato puree, concentrate, and maple syrup and mix well.
- Add a few ladles of water and let simmer on a gentle heat for about 10 minutes.
- In the meantime, cook basmati rice in boiling salted water according to the times on the package.
- Combine the curry sauce with the prawns and lime juice for the last two minutes of cooking.
- Serve the shrimp curry accompanied by basmati rice.
Decorate to taste with fresh cilantro or parsley and a few fresh chili rings.
