Croutons with roasted pumpkin in maple syrup

Ingredients
- 1 medium pumpkin
- 2 tablespoons
MapleFarm Pure Maple Syrup – Dark BIO
, plus extra to use at serving time - 2 tablespoons olive oil
- 1 baguette
- 30 g regular or vegetable butter
- 20 g Feta cheese, regular or vegetable
- Pumpkin seeds to taste.
- Sage leaves to taste.
Instructions
- Preheat the oven to 200°.
- Wash the pumpkin and cut it into wedges. Arrange it on a baking sheet covered with baking paper.
- Pour olive oil and maple syrup over the pumpkin slices and brush well.
- Cook for about 25 minutes, until the flesh is well roasted and tender.
- Transfer the squash to a large dish, lightly mash the flesh, and set aside.
- Cut the baguette into slices about 1 cm high, arrange them on a baking sheet, pour in a drizzle of oil, and bake with the grill function for about 5 minutes, until nicely browned.
- Melt butter in a frying pan, add sage leaves and fry them until crispy.
- Pass the fried sage on paper towels to remove excess grease.
- Compose the crostini by adding crushed pumpkin, feta crumbs, a couple of sage leaves and pumpkin seeds for decoration.
- Serve immediately. You can drizzle the criìostini with more of the maple syrup
