The production and processing system of our organic maple syrup is based on respect for human, animal and environmental health: less air and water pollution, responsible use of natural resources and attention to biodiversity.
The use of chemical fertilizers, herbicides, fungicides, insecticides and pesticides is excluded. Genetically modified organisms (GMOs) are also prohibited.

The production disciplinary comply with the European regulation n. 834/07 and 889/08.

Protected and unspoilt forests

Our organic maple syrup comes exclusively from the pristine areas of Canada’s Quebec, where only routine maintenance of the undergrowth is allowed. We personally select the soils with the highest concentration of trees, ensuring the presence of at least 15% of different species of trees to protect and preserve the original ecosystem.
In full compliance with the BIO certification plan, each area is carefully fenced and the surrounding areas are not used for the cultivation of agri-food products using chemicals or pesticides.

Natural collection system

Shortly before the beginning of the collection period, specialized operators install special pipes to allow the sap to flow into the collection tanks, taking care to verify that the diameter of the trees themselves not more than 20 cm, measured at a height of 1,5 metres above the ground.
Since the interweaving of long pipelines could pose a danger to wildlife, we only use pipelines of bluish color particularly visible from animals.
The lymph, once removed from the collection tank, is treated by a natural reverse aosmosis system which concentrates the crystalline liquid before boiling. This process retains the mineral elements and produces a more condensed liquid that requires less energy and heat in the subsequent evaporation phase.
Cleaning and sanitization of instruments and equipment is carried out only by the use of food ethyl alcohol or alcohol vinegar.

Controlled and certified production chain

Organic maple syrup passes rigorous checks that involve different areas of production.
Production records, cleaning and sanitizing procedures, product traceability and collection sites are checked. Inspectors shall also ensure that the number of bottles produced and those actually sold is always balanced.
Physical and bacteriological analysis finally make a 100% healthy and pure product.
We offer the maximum guarantee through cross-inspections by two independent certification agencies: bioagricert (Italy) and Ecocert Canada.
We are also accredited by the Italian Ministry of Agriculture as importers of organic products from third countries.
