Ingredients

For the salad:

  • 60 g of cashews
  • 150 g of broccoli florets
  • 150 g of Romanesco broccoli florets
  • 100 g of cooked chickpeas
  • salt

For dressing:

To garnish:

  • 2 teaspoons of white sesame seeds

Instructions

  • Toast cashews in a frying pan without adding fat until golden and crispy.
  • Salt the broccoli and romanesco florets and steam them for about 40 minutes, until tender. Let them cool.
  • Prepare the dressing by emulsifying the maple syrup, oil, peanut butter, soy sauce, and water with an immersion blender.
  • Combine the florets in a salad bowl with the cooked chickpeas and cashews. Season with the prepared dressing, scatter white sesame seeds and serve.
