Ingredients

  • 2 small eggs
  • 125g 4-grain flour
  • 2 tablespoons of brown sugar
  • 1 level teaspoon of baking powder
  • a pinch of salt
  • 125ml Greek yogurt
  • strawberries or fresh seasonal fruit to taste
  • 125ml milk
  • MapleFarm Pure Maple Syrup – Gold

Instructions

  • In a jug, mix the milk with with the eggs with a hand whisk.
  • In a bowl mix the flour, baking powder, sugar, and salt.
  • Pour over the egg-milk mixture and mix the two until the batter is smooth.
  • Lightly grease a nonstick skillet with butter; remove excess with paper towels.
  • When hot pour in a ladleful of the mixture, cook, and when the first bubbles form turn the pancake over and continue cooking.
  • Plate the pancakes on a serving platter and garnish with the Greek yogurt, strawberries, and plenty of maple syrup.
